{December 15, 2016}   Overnight Oats (Happy Cooking by Giada de Laurentiis, 2015, page 12 [pictured on page 13])

Serves 2.

Ingredients:

  • 1 cup rolled oats
  • 1 tablespoon chia seeds
  • 1.25 cups unsweetened almond milk
  • 0.5 teaspoon pure vanilla extract
  • 0.25 teaspoon ground cinnamon
  • 1 tablespoon pure grade B maple syrup
  • 1 cup mixed berries or chopped stone fruit
  • 0.25 cup chopped raw almonds

Instructions:

  1. In a medium bowl, combine the oats, chia seeds, almond milk, vanilla, cinnamon, + maple syrup.  Cover + refrigerate overnight.
  2. To serve, spoon into 2 bowls + top with the fruit + nuts.
