{August 7, 2015}   Sweet Potato Ribbon Chips (The Bon Appetit Fast Easy Fresh Cookbook [Chapter 2: Quick Starters, page 24, 2008])

2 peeled med. red-skinned yams
Vegetable oil [deep-frying]

Using V-slicer + starting at 1 wide side of potato, thinly shave potato lengthwise into long, wide ribbons.  Repeat with remaining potato.
Pour 2″ depth of oil into heavy lrg. pot.  Heat oil to 375 degrees F.  Add handful of potatoes to oil.  Fry 30 s-1 m.  Using slotted spoon, transfer potatoes to paper towels to drain.  Sprinkle with salt + repeat with remaining potatoes in batches.
