{March 13, 2014}   Roasted Tomato + Green Chile Salsa (Cooking Light: The New Way To Cook Light, 2012)

6 plum tomatoes
3 unpeeled garlic cloves
2 jalapeño peppers
.33 c chopped fresh cilantro
.25 c finely chopped onion
1 tsp fresh lime juice
.25 tsp salt

1) Preheat broiler.
2) Place tomatoes, garlic, + jalapeños on foil lined baking sheet.  Broil 16 m, turning after halfway.  Cool and peel tomatoes + garlic.  Combine garlic and peppers in molcajete, mortar, or bowl.  Pound w pestle or back of spoon to form paste.  Add tomatoes.  Coarsely crush with pestle or spoon.  Combine tomato mix, cilantro, and last 2 ingredients in sm bowl.

6 .25 c servings.
