{March 11, 2014}   Breakfast, Lunch, + Dinner Waffle with Ham, Cheese, + Fried Egg (Top Chef Cookbook, 2008)

Serves 1

.33 c refried beans
1 tbl olive oil
Salt + freshly ground black pepper
1 tbl + 2 tsp unsalted butter
1 lrg egg
1 frozen waffle
Maple syrup (drizzling)
2 thin slices Muenster Cheese + coppa ham each
1 tbl chopped fresh flat leaf parsley

1) Preheat broiler.
2) In small bowl, combine refried beans with olive oil, adding a little water to thin it out, if needed.  Mix well and season with salt and pepper to taste.
3) In small skillet, melt 1 tbl butter over medium heat.  Crack egg into skillet.  Fry to desired firmness.  Remove from skillet.  Set aside.
4) While the egg is frying, toast waffle to desired doneness.  Spread with last 2 tsp butter and with refried bean mix.
5) Drizzle with maple syrup and top with cheese.
6) Put waffle in broiler and cook 2-3 m.
7) Remove from oven, top with ham and fried egg, sprinkle with parsley.  Season to taste and serve immediately.
