{July 18, 2013}   Smoked Salmon Party Dip (The New AHA Cookbook: 25th Anniversary Edition [2001])

1 cup nonfat or low fat cottage cheese

1 cup nonfat or light sour cream

4 ounces chopped smoked salmon

4 finely chopped green onions

2 teaspoons fresh lemon juice

.25 teaspoon garlic powder

1 medium red cabbage

8 leaves curly leaf lettuce

.25 teaspoon paprika

2 medium red, yellow, and green bell peppers each, cut into 1″ strips

Put cottage cheese in food processor or blender.  Puree 30 s.  Scrape into medium bowl.

Stir in remaining dip ingredients.  Cover and refrigerate.

Cabbage bowl:  Trim core end of cabbage so cabbage will sit flat.  Starting at top, hollow out inside with sharp knife and spoon.

Assembly:  Line large platter with lettuce leaves.  Place cabbage in center.  Pour dip into cabbage + sprinkle with paprika.  Arrange bell peppers around cabbage.  Cover with plastic wrap and refrigerate until serving time.
