{July 9, 2013}   Sausage Pizza (Cooking Light: Crave! [2013])

1.5 teaspoon olive oil

.25-.5 teaspoon crushed red pepper

1 4 ounce link sweet turkey Italian sausage

.5 cup vertically sliced fennel bulb

.5 cup vertically sliced red onion

.25 cup kosher salt

.67 cup chopped seeded tomato

Homemade Pizza Dough

Cooking spray

.25 grated fresh Parmigiano Reggiano cheese

  1. Position oven rack in lowest setting.  Place pizza stone or baking sheet on bottom rack in oven.  Preheat oven to 500 degrees F.  Preheat stone or sheet 30 m before baking pizza.
  2. Heat oil in large nonstick skillet over medium high heat.  Add pepper to pan; cook 10 s.  Remove casing from sausage. Add sausage, fennel, and onion to pan; saute 4 m, stirring to crumble sausage.  Stir in salt.  Add tomato; saute 2 m.  Remove from heat.
  3. Roll dough into 10″ circle on lightly floured surface.  Place dough on 10″ pizza pan or baking sheet coated with cooking spray.
  4. Spread sausage mix over dough, leaving a .5″ border.  Slide dough onto stone or sheet, using spatula as a guide.
  5. Bake at 500 degrees F 8 m.  Sprinkle with cheese.  Cut pizza into 6 wedges. Serves 6.
