{July 8, 2013}   Peach + Gorgonzola Chicken Pizza (Cooking Light: Crave! [2013])

1 10-ounce pre baked thin pizza crust

Cooking spray

1 teaspoon extra virgin olive oil

.5 cup shredded part skim mozzarella cheese, divided

1 cup shredded cooked chicken breast

.33 cup crumbled Gorgonzola cheese

1 unpeeled medium peach, thinly sliced

.33 cup balsamic vinegar

  1. Preheat oven to 400 degrees F.
  2. Place pizza crust on a baking sheet coated with cooking spray.  Brush oil evenly over crust.  Top evenly with .25 cup mozzarella, chicken, Gorgonzola, and peach slices.  Top with .25 cup mozzarella.  Bake at 400 degrees F 11 m.
  3. Place vinegar in small saucepan over medium heat; cook 5 m.  Drizzle balsamic reduction evenly over pizza.  Cut pizza into 8 wedges.  Serves 4.
