{July 7, 2013}   Chicken + Herb White Pizza (Cooking Light: Crave! [2013])

1 pound refrigerated fresh pizza dough

Cooking spray

1 tablespoon butter

2 minced garlic cloves

2 tablespoons all-purpose flour

.5 teaspoon freshly ground black pepper

.75 cup 2% reduced fat milk

.5 cup grated fresh pecorino Romano cheese

1 tablespoon yellow cornmeal

1.5 cups shredded boneless, skinless roasted chicken breast

.25 cup diced red onion

1 tablespoon each chopped fresh oregano, chives, and parsley

  1. Position oven rack in lowest setting.  Preheat oven to 450 degrees F.
  2. Place dough in a bowl coated with cooking spray; let dough stand, covered, 30 m.
  3. Melt butter in medium saucepan over medium heat.  Add garlic; cook 30 s, stirring constantly.  Add flour + pepper; cook 1 m, stirring constantly with a whisk.  Gradually add milk, stirring constantly with a whisk.  Remove from heat; add cheese, stirring until cheese melts.
  4. Sprinkle a baking sheet with cornmeal; roll dough into 12″ circle on prepared baking sheet.  Spread white sauce over dough, leaving a .5″ border.  Top with chicken and onion.  Bake at 450 degrees F on bottom rack in oven 17 m.  Sprinkle with herbs.  Cut pizza into 6 wedges.  Serves 6.
