{July 4, 2013}   Pepperoni, Onion, + Olive Pizza (Cooking Light: Crave! [2013])

1 pound refrigerated fresh pizza dough

Cooking spray

1 tablespoon yellow cornmeal

.5 cup lower sodium marinara sauce

.5 cup thinly sliced onion

1 ounce pepperoni slices

10 pitted nicoise olives, halved lengthwise

.75 cup preshredded reduced fat 4 cheese Italian blend cheese

  1. Position oven rack in lowest setting.  Preheat oven to 450 degrees.
  2. Place dough in a bowl coated with cooking spray; let stand, covered, 30 m.
  3. Sprinkle a baking sheet with cornmeal; roll dough into a 12″ circle on prepared baking sheet.  Spread sauce evenly over dough, leaving .5″ border.  Top with onion, pepperoni, and olives; sprinkle with cheese.  Bake at 450 degrees F on bottom rack in oven 17 m.  Cut pizza into 6 wedges.  Serves 6.
