{July 4, 2013}   Pear + Prosciutto Pizza (Cooking Light: Crave! [2013])

2 teaspoons olive oil

2 cups vertically sliced sweet onion

1 prebaked pizza crust

.5 cup shredded provolone cheese

1 thinly sliced medium pear

2 ounces prosciutto cut into thin strips

Dash of freshly ground black pepper

2 tablespoons toasted chopped walnuts

1.5 cups arugula

1 teaspoon sherry vinegar

  1. Preheat oven to 450 degrees F.
  2. Heat oil in a large nonstick skillet over medium-high heat.  Add onion to pan; cover + cook 3 m.  Uncover + cook 10 m more, stirring frequently.
  3. Place pizza crust on baking sheet.  Top evenly with onion mix; sprinkle with cheese.  Top evenly with pear and prosciutto.  Sprinkle with pepper.  Bake at 450 degrees F 12 m.  Sprinkle with nuts.  Place arugula in medium bowl.  Drizzle vinegar over greens; toss gently to coat.  Top pizza evenly with arugula mix.  Cut pizza into 8 wedges.  Serves 4.
