{July 4, 2013}   Manchego + Chorizo Pizza (Cooking Light: Crave! [2013])

.5 pound trimmed broccoli rabe

.125 teaspoon salt

1 prebaked pizza crust

.5 shredded Manchego cheese

.67 chopped plum tomato

.25 cup vertically sliced red onion

1 thinly sliced link Spanish chorizo sausage

  1. Preheat oven to 450 degrees F.
  2. Cook broccoli rabe in boiling water 4 m.  Drain + rinse with cold water.  Drain; squeeze excess moisture from broccoli rabe, and pat dry with paper towels.  Coarsely chop, and sprinkle with salt.
  3. Place pizza crust on a baking sheet.  Sprinkle evenly with Manchego cheese.  Top with broccoli rabe, plum tomato, red onion, and chorizo.  Bake at 450 degrees F 12 m.  Cut pizza into 8 wedges.  Serves 4.
