{July 3, 2013}   Bacon, Tomato, + Arugula Pizza (Cooking Light: Crave! [2013])

4 applewood smoked bacon slices

2 cups grape tomatoes, halved lengthwise

.5 teaspoon crushed red pepper

1 tablespoon yellow cornmeal

Whole Wheat Pizza Dough

.5 cup lower sodium marinara sauce

.75 cup shredded part-skim mozzarella cheese

1 cup arugula

1 teaspoon extra virgin olive oil

.5 teaspoon white wine vinegar

  1. Position oven rack in lowest setting.  Preheat oven to 450 degrees F.
  2. Cook bacon in large nonstick skillet over medium heat until crisp.  Remove bacon from pan; reserve 2 teaspoons drippings; crumble bacon and set aside.  Add tomatoes and red pepper to drippings in pan; cook 2 m, stirring occasionally.
  3. Sprinkle a large baking sheet with cornmeal; roll dough into a 12″ circle on prepared baking sheet.  Spread sauce over dough; top with with tomato mix.  Sprinkle bacon and cheese over tomato mix.
  4. Bake at 450 degrees on bottom rack in oven 17 m.  Combine arugula, oil, and vinegar; top pizza with arugula mixture.  Cut pizza into 6 wedges.  Serves 6.
