{July 3, 2013}   Bacon, Onion, + Mushroom Pizza (Cooking Light: Crave! [2013])

1 divided tablespoon olive oil

2 cups vertically sliced onion

1 package presliced cremini mushrooms

2 teaspoons yellow cornmeal

1 can refrigerated French bread dough

.75 cup shredded white cheddar cheese

6 cooked and coarsely crumbled bacon slices

.25 finely chopped fresh flat leaf parsley

  1. Position oven rack in lowest setting.  Preheat oven to 425 degrees F.
  2. Heat a large nonstick skillet over medium heat.  Add 2 teaspoons oil to pan; swirl to coat.  Add onion; cook , stirring frequently, 6 m.  Place onion in a bowl.  Add 1 teaspoon to pan; add mushrooms.  Cook, stirring often, 6 m.  Add mushrooms to onion mix; toss well.
  3. Sprinkle cornmeal on a large baking sheet.  Gently unroll dough onto a lightly floured surface.  Roll dough into 8″ x 12″ rectangle; transfer to prepared pan.  Spread onion mix over prepared dough to within .25″ of edge.  Sprinkle onion mix with cheese + bacon.  Place pan on bottom rack in oven.  Bake at 425 degrees F 15 m.  Sprinkle with parsley. Cut pizza into 6 pieces.  Serves 6.
